Ingredients

Dark chocolate
200g, melted
Sour cream
200g
Eggs
3, at room temperature
Vanilla extract
1 teaspoon
Granulated sugar
150g
Cream cheese
500g, softened
Unsalted butter
100g, melted
Tim Tam biscuits
250g

Instructions

  1. Preheat the oven to 160°C (320°F).
  2. In a food processor, crush the Tim Tams until they resemble fine crumbs. Add the melted butter and process until thoroughly combined.
  3. Press the biscuit mixture into the base of a 20cm (8 inch) springform pan to create an even layer. Refrigerate for 15 minutes to set.
  4. In a large mixing bowl, beat the softened cream cheese, granulated sugar, and vanilla extract until smooth and creamy.
  5. Add the eggs one at a time, beating well after each addition to ensure a light texture.
  6. Stir in the sour cream and melted dark chocolate, mixing until well combined.
  7. Pour the cheesecake mixture over the chilled biscuit base and smooth the surface with a spatula.
  8. Bake for 1 hour or until the center is just set. Turn off the oven and leave the cheesecake inside with the door slightly ajar for 2 hours to cool gradually.
  9. Once cooled, refrigerate for at least 3 hours or until fully chilled before serving.
