Ingredients

Original recipe serves 12

Ladyfingers
24 pieces
Cream cheese
16 ounces, softened
Mascarpone cheese
16 ounces
Sugar
3/4 cup
Eggs
3 large
Strong brewed coffee
1 cup, cooled
Kahlua or coffee liqueur
1/4 cup
Vanilla extract
1 teaspoon
Cocoa powder
2 tablespoons, plus extra for dusting
Whipped cream
1 cup, for topping

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. Using a food processor, crush the ladyfingers into fine crumbs. Set aside.
  3. In a mixing bowl, beat the softened cream cheese and sugar together with an electric mixer until smooth and creamy.
  4. Add the eggs one at a time, mixing well after each addition to ensure a light texture.
  5. Incorporate the mascarpone cheese, cooled brewed coffee, Kahlua or coffee liqueur, cocoa powder, and vanilla extract into the mixture. Blend until fully combined and creamy.
  6. Grease a 9-inch (23cm) springform pan with butter or cooking spray. Press the crushed ladyfingers into the bottom of the pan to form a firm crust.
  7. Pour the cheesecake mixture over the ladyfinger crust and smooth the top with a spatula.
  8. Bake in the preheated oven for 50-60 minutes, or until the center is set and the edges are slightly golden. A slight jiggle in the center is acceptable.
  9. Remove from the oven and let cool to room temperature in the pan. Once cooled, refrigerate for at least 4 hours, or overnight, to allow the cheesecake to set properly.
  10. Before serving, spread whipped cream over the top of the cheesecake and dust with additional cocoa powder for an elegant finish.
  11. Slice into wedges and serve chilled. Enjoy!
