Ingredients

  • Almond flour (1 cup)
  • Powdered sugar (1 3/4 cups)
  • Egg whites (3 large, at room temperature)
  • Granulated sugar (1/4 cup)
  • Cream of tartar (1/4 teaspoon)
  • Heavy cream (1/2 cup)
  • Mascarpone cheese (8 ounces)
  • Instant coffee granules (2 tablespoons)
  • Cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a food processor, combine the almond flour and powdered sugar. Process until the mixture is very fine and well combined to ensure a smooth macaron shell.
  3. In a large mixing bowl, beat the egg whites with an electric mixer on medium speed until foamy. Gradually add the granulated sugar and cream of tartar, continuing to beat on high speed until stiff peaks form and the mixture is glossy, which usually takes around 5-7 minutes.
  4. Gently fold in the almond flour mixture using a spatula, being careful not to deflate the egg whites. The batter should be smooth and shiny, resembling molten lava.
  5. Transfer the macaron batter to a piping bag fitted with a round tip. Pipe small circles (about 1.5 inches in diameter) onto the prepared baking sheets, leaving space between each macaron.
  6. Let the piped macarons sit at room temperature for about 30 minutes, or until a skin forms on the surface and they are no longer sticky to the touch. This step is crucial for achieving the signature 'feet' of macarons.
  7. Bake the macarons in the preheated oven for 20 minutes, or until they have risen and are set. Allow them to cool completely on the baking sheets before removing them.
  8. While the macarons are cooling, prepare the filling. In a medium bowl, combine the mascarpone cheese, heavy cream, and instant coffee granules. Beat with an electric mixer until smooth and creamy, which should take about 3-5 minutes.
  9. Once the macarons are cool, pipe the coffee mascarpone filling onto the flat side of half of the macarons and gently top them with the remaining macarons.
  10. Dust the tops with cocoa powder just before serving for a beautiful finish and an added touch of flavor.
