Ingredients

Original recipe serves 4

Vegetable oil
2 tablespoons
Salt
1/2 teaspoon
Milk
1 cup
Eggs
4, large
All-purpose flour
1 cup
Sausages
8, high-quality
Onion
1, thinly sliced for the gravy
Beef stock
2 cups, for the gravy
Cornstarch
1 tablespoon, for the gravy

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Place the sausages in a baking dish and drizzle with vegetable oil. Bake for 10 minutes until they are nicely browned.
  3. While the sausages are baking, in a mixing bowl, whisk together the flour, eggs, milk, and salt until smooth. Let the batter rest for a few minutes.
  4. Remove the sausages from the oven and pour the batter over them. Make sure the sausages are evenly spread out within the batter.
  5. Return the dish to the oven and bake for an additional 25-30 minutes, or until the batter has puffed up and turned golden brown.
  6. While the dish is baking, prepare the gravy. In a saucepan, saute the sliced onions in a little oil until caramelised. Add the beef stock and bring to a simmer. Mix the cornstarch with a little cold water to make a slurry, then stir it into the gravy. Continue to simmer until the gravy thickens.
  7. Serve the Toad in the Hole hot, drizzled with the onion gravy and your choice of vegetables on the side.
