Toad in the Hole

Ingredients
- 2 tablespoons Vegetable oil
- 1/2 teaspoon Salt
- 1 cup Milk
- 4, large Eggs
- 1 cup All-purpose flour
- 8, high-quality Sausages
- 1, thinly sliced for the gravy Onion
- 2 cups, for the gravy Beef stock
- 1 tablespoon, for the gravy Cornstarch

Instructions
- Preheat the oven to 425°F (220°C).
- Place the sausages in a baking dish and drizzle with vegetable oil. Bake for 10 minutes until they are nicely browned.
- While the sausages are baking, in a mixing bowl, whisk together the flour, eggs, milk, and salt until smooth. Let the batter rest for a few minutes.
- Remove the sausages from the oven and pour the batter over them. Make sure the sausages are evenly spread out within the batter.
- Return the dish to the oven and bake for an additional 25-30 minutes, or until the batter has puffed up and turned golden brown.
- While the dish is baking, prepare the gravy. In a saucepan, saute the sliced onions in a little oil until caramelised. Add the beef stock and bring to a simmer. Mix the cornstarch with a little cold water to make a slurry, then stir it into the gravy. Continue to simmer until the gravy thickens.
- Serve the Toad in the Hole hot, drizzled with the onion gravy and your choice of vegetables on the side.
Tips
- The secret to a good Yorkshire pudding batter is to allow it to rest. This gives the flour time to absorb the liquid, leading to a better rise in the oven.
- For a vegetarian version, you could substitute the sausages with vegetarian sausages and use vegetable stock for the gravy.
