Instructions
- In a food processor, blend the fish fillets until smooth, creating a fine fish paste.
- Transfer the fish paste to a mixing bowl and add the red curry paste, chopped kaffir lime leaves, chopped green beans, fish sauce, beaten egg, and cornstarch. Mix well until all ingredients are fully incorporated.
- Heat vegetable oil in a frying pan over medium heat until hot but not smoking.
- Take a spoonful of the fish mixture and shape it into a small patty, about 2 inches wide. Repeat with the remaining mixture, ensuring they are evenly shaped.
- Carefully place the fish cakes into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown on both sides, about 3-4 minutes per side.
- Once cooked, remove the fish cakes from the pan and drain on paper towels to remove excess oil.
- Serve the Tod Man Pla with sweet chili sauce drizzled over the top and a side of fresh cucumber slices for a refreshing crunch.
- Enjoy your homemade Thai fish cakes!
Tips
- For a spicier kick, add additional red curry paste or minced chili peppers to the mixture.
- You can substitute the fish with shrimp or a mix of seafood for a different flavor profile.
- If you prefer a lighter version, try baking the fish cakes at 375°F (190°C) for about 20 minutes, flipping halfway through.
