Tod Man Pla (Thai Fish Cakes)

Ingredients
- White fish fillets
 - 1 pound, skinless and boneless
 - Red curry paste
 - 2 tablespoons
 - Kaffir lime leaves
 - 2, finely chopped
 - Green beans
 - 1/2 cup, finely chopped
 - Fish sauce
 - 1 tablespoon
 - Egg
 - 1, beaten
 - Cornstarch
 - 1/4 cup
 - Vegetable oil
 - for frying
 - Cucumber slices
 - for serving
 - Sweet chili sauce
 - for serving
 
Instructions
- In a food processor, blend the fish fillets until smooth, creating a fine fish paste.
 - Transfer the fish paste to a mixing bowl and add the red curry paste, chopped kaffir lime leaves, chopped green beans, fish sauce, beaten egg, and cornstarch. Mix well until all ingredients are fully incorporated.
 - Heat vegetable oil in a frying pan over medium heat until hot but not smoking.
 - Take a spoonful of the fish mixture and shape it into a small patty, about 2 inches wide. Repeat with the remaining mixture, ensuring they are evenly shaped.
 - Carefully place the fish cakes into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown on both sides, about 3-4 minutes per side.
 - Once cooked, remove the fish cakes from the pan and drain on paper towels to remove excess oil.
 - Serve the Tod Man Pla with sweet chili sauce drizzled over the top and a side of fresh cucumber slices for a refreshing crunch.
