White fish fillets
1 pound, skinless and boneless
Red curry paste
2 tablespoons
Kaffir lime leaves
2, finely chopped
Green beans
1/2 cup, finely chopped
Fish sauce
1 tablespoon
Egg
1, beaten
Cornstarch
1/4 cup
Vegetable oil
for frying
Cucumber slices
for serving
Sweet chili sauce
for serving

Instructions

  1. In a food processor, blend the fish fillets until smooth, creating a fine fish paste.
  2. Transfer the fish paste to a mixing bowl and add the red curry paste, chopped kaffir lime leaves, chopped green beans, fish sauce, beaten egg, and cornstarch. Mix well until all ingredients are fully incorporated.
  3. Heat vegetable oil in a frying pan over medium heat until hot but not smoking.
  4. Take a spoonful of the fish mixture and shape it into a small patty, about 2 inches wide. Repeat with the remaining mixture, ensuring they are evenly shaped.
  5. Carefully place the fish cakes into the hot oil, ensuring not to overcrowd the pan. Fry until golden brown on both sides, about 3-4 minutes per side.
  6. Once cooked, remove the fish cakes from the pan and drain on paper towels to remove excess oil.
