Ginger
2-inch piece, thinly sliced
Water
1 cup
Brown sugar
1/2 cup
Silken tofu
1 block (about 14 ounces), drained

Instructions

  1. Gently remove the silken tofu from its packaging, taking care to keep it intact. Drain any excess water and place it in a serving bowl.
  2. In a saucepan, combine the sliced ginger, water, and brown sugar. Stir the mixture over medium heat, until the sugar dissolves, creating a flavorful syrup.
  3. Once the sugar has dissolved, reduce the heat to low and let the syrup simmer for 10 minutes. This will allow it to thicken slightly and infuse with the ginger's distinctive heat.
  4. After simmering, remove the saucepan from the heat. Use a slotted spoon to remove the ginger slices from the syrup and discard them.
  5. While it's still warm, gently pour the ginger-infused syrup over the silken tofu. Ensure that the tofu is evenly covered.
  6. Allow the tofu pudding to cool at room temperature. Once cooled, it can be served immediately or refrigerated for a chilled dessert.
