Pasta

Toma cheese
8 oz, grated
Olive oil
3 tablespoons
Garlic

1/4 cup, chopped
Salt

Black pepper

Pasta water
1 cup, reserved

Instructions

  1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1 cup of pasta water before draining the pasta.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes, or until fragrant and lightly golden. Be careful not to burn the garlic, as it can impart a bitter flavor.
  3. Add the drained pasta to the skillet, tossing it gently to coat in the garlic-infused olive oil.
  4. Gradually add the grated Toma cheese to the pasta, stirring continuously until the cheese melts into a creamy sauce. If the sauce becomes too thick, slowly mix in some of the reserved pasta water until you reach your desired consistency.
