Servings: 6

Ingredients

Baguette
1, sliced into 1/2-inch thick slices
Olive oil
1/4 cup, plus extra for drizzling
Garlic
2 cloves, minced
Tomatoes
2 cups, diced (preferably heirloom or vine-ripened)
Fresh basil
1/2 cup, chopped
Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, or to taste
Balsamic glaze
optional, for drizzling

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Arrange the baguette slices on a baking sheet in a single layer. Brush each slice generously with olive oil to ensure they toast beautifully.
  3. Bake the baguette slices for 5-7 minutes, or until they are lightly golden and crisp. Keep an eye on them to prevent burning.
  4. While the baguette is toasting, prepare the tomato topping. In a medium bowl, mix together the diced tomatoes, minced garlic, chopped basil, salt, and black pepper. Adjust seasoning to taste.
  5. Once the baguette slices are toasted, remove them from the oven and let them cool slightly.
  6. Top each toasted baguette slice with a generous spoonful of the tomato mixture.
  7. For an extra touch of flavor, drizzle with additional olive oil or balsamic glaze before serving.
  8. Serve immediately to enjoy the contrast of the warm crostini and the fresh topping.
