
Tomato and Basil Omelette
This delicious omelette is filled with fresh tomatoes and fragrant basil, perfect for a quick and healthy breakfast or brunch.
Ingredients
- Grated parmesan cheese (2 tablespoons)
- Olive oil (1 tablespoon)
- Black pepper (1/4 teaspoon)
- Salt (1/2 teaspoon)
- Fresh basil (1/4 cup, chopped)
- Tomatoes (2 medium, diced)
- Eggs (4)
Instructions
- In a bowl, whisk the eggs with salt and black pepper.
- Heat olive oil in a non-stick skillet over medium heat.
- Add the diced tomatoes and cook for 2-3 minutes until slightly softened.
- Pour the whisked eggs into the skillet and let it cook undisturbed for a minute.
- Sprinkle the chopped basil and grated Parmesan cheese over one half of the omelette.
- Using a spatula, fold the other half of the omelette over the filling.
- Cook for another 2-3 minutes until the omelette is cooked through and the cheese is melted.
- Slide the omelette onto a plate and serve hot.
