Tomato and Basil Omelette

This delicious omelette is filled with fresh tomatoes and fragrant basil, perfect for a quick and healthy breakfast or brunch.

Ingredients

  • Grated parmesan cheese (2 tablespoons)
  • Olive oil (1 tablespoon)
  • Black pepper (1/4 teaspoon)
  • Salt (1/2 teaspoon)
  • Fresh basil (1/4 cup, chopped)
  • Tomatoes (2 medium, diced)
  • Eggs (4)

Instructions

  1. In a bowl, whisk the eggs with salt and black pepper.
  2. Heat olive oil in a non-stick skillet over medium heat.
  3. Add the diced tomatoes and cook for 2-3 minutes until slightly softened.
  4. Pour the whisked eggs into the skillet and let it cook undisturbed for a minute.
  5. Sprinkle the chopped basil and grated Parmesan cheese over one half of the omelette.
  6. Using a spatula, fold the other half of the omelette over the filling.
  7. Cook for another 2-3 minutes until the omelette is cooked through and the cheese is melted.
  8. Slide the omelette onto a plate and serve hot.
