Tomato and Cucumber Bruschetta

This refreshing bruschetta is made with ripe tomatoes, crisp cucumbers, and fresh herbs.

Ingredients

  • Salt and pepper (to taste)
  • Balsamic vinegar (1 tablespoon)
  • Extra virgin olive oil (2 tablespoons)
  • Garlic (2 cloves, minced)
  • Fresh parsley (1/4 cup, chopped)
  • Fresh basil (1/4 cup, chopped)
  • Red onion (1/4 cup, finely chopped)
  • Cucumber (1, diced)
  • Tomatoes (2, diced)
  • Baguette (1)

Instructions

  1. Preheat the oven to 350°F.
  2. Slice the baguette into 1/2-inch thick slices.
  3. Place the baguette slices on a baking sheet and brush both sides with olive oil.
  4. Bake for 10 minutes, or until the bread is toasted and crispy.
  5. In a bowl, combine the diced tomatoes, cucumber, red onion, basil, parsley, garlic, olive oil, balsamic vinegar, salt, and pepper. Mix well.
  6. Let the tomato and cucumber mixture sit for 5 minutes to allow the flavors to meld together.
  7. Top each toasted baguette slice with a spoonful of the tomato and cucumber mixture.
  8. Serve immediately and enjoy!
