
Tomato and Cucumber Bruschetta
This refreshing bruschetta is made with ripe tomatoes, crisp cucumbers, and fresh herbs.
Ingredients
- Salt and pepper (to taste)
- Balsamic vinegar (1 tablespoon)
- Extra virgin olive oil (2 tablespoons)
- Garlic (2 cloves, minced)
- Fresh parsley (1/4 cup, chopped)
- Fresh basil (1/4 cup, chopped)
- Red onion (1/4 cup, finely chopped)
- Cucumber (1, diced)
- Tomatoes (2, diced)
- Baguette (1)
Instructions
- Preheat the oven to 350°F.
- Slice the baguette into 1/2-inch thick slices.
- Place the baguette slices on a baking sheet and brush both sides with olive oil.
- Bake for 10 minutes, or until the bread is toasted and crispy.
- In a bowl, combine the diced tomatoes, cucumber, red onion, basil, parsley, garlic, olive oil, balsamic vinegar, salt, and pepper. Mix well.
- Let the tomato and cucumber mixture sit for 5 minutes to allow the flavors to meld together.
- Top each toasted baguette slice with a spoonful of the tomato and cucumber mixture.
- Serve immediately and enjoy!
