
Tomato and Cucumber Ceviche
This refreshing tomato and cucumber ceviche is a light and flavorful dish perfect for summer.
Ingredients
- Tortilla chips (for serving)
- Avocado (1, diced (optional))
- Black pepper (1/4 teaspoon)
- Salt (1/2 teaspoon)
- Jalapeno (1 small, seeded and minced)
- Cilantro (2 tablespoons, chopped)
- Lime juice (2 tablespoons)
- Red onion (1/2 small, thinly sliced)
- Cucumber (1 large, diced)
- Tomatoes (4 medium, diced)
Instructions
- In a large bowl, combine the diced tomatoes, cucumber, red onion, lime juice, cilantro, jalapeno, salt, and black pepper.
- Toss gently to combine and let it sit for 10 minutes to allow the flavors to meld together.
- If desired, add diced avocado and gently toss to combine.
- Serve the ceviche chilled with tortilla chips on the side.
