Tomato and Cucumber Chutney

This refreshing chutney is made with ripe tomatoes, crisp cucumbers, and a blend of aromatic spices.

Ingredients

  • Sugar (1/2 teaspoon)
  • Salt (1/2 teaspoon)
  • Ground coriander (1 teaspoon)
  • Ground cumin (1 teaspoon)
  • Lemon juice (2 tablespoons)
  • Fresh cilantro (1/4 cup, chopped)
  • Green chili (1, finely chopped)
  • Red onion (1 small, finely chopped)
  • Cucumbers (2 medium, diced)
  • Tomatoes (4 medium, diced)

Instructions

  1. In a mixing bowl, combine the diced tomatoes, cucumbers, red onion, green chili, and fresh cilantro.
  2. In a separate small bowl, whisk together the lemon juice, ground cumin, ground coriander, salt, and sugar.
  3. Pour the dressing over the tomato and cucumber mixture and toss well to combine.
  4. Let the chutney sit for at least 10 minutes to allow the flavors to meld together.
  5. Serve the tomato and cucumber chutney as a side dish or condiment with your favorite Indian or Mediterranean dishes.
