This vibrant and refreshing salad brings together the crispness of spiralized cucumber and the juiciness of fresh tomatoes. Tossed in a tangy homemade dressing and infused with the aromatic notes of fresh basil, it's a salad that's not just delicious but also visually appealing. Ingredients

Cucumber
1 large
Tomato
2 large
Red onion
1/2, thinly sliced
Fresh basil leaves
1/4 cup, loosely packed
Olive oil
1/4 cup
Lemon juice
2 tablespoons
Honey
1 tablespoon
Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, freshly ground

Instructions

  1. Start by preparing the vegetables. Using a spiralizer, turn the cucumber into noodle-like strands. If you don't have a spiralizer, you can use a vegetable peeler to make thin strips instead.
  2. Slice the tomatoes into thin rounds. Thinly slice the red onion and roughly chop the fresh basil leaves.
  3. In a large bowl, combine the spiralized cucumber, tomato slices, red onion slices, and fresh basil. Toss gently until well combined.
  4. Prepare the dressing by whisking together the olive oil, lemon juice, honey, salt, and freshly ground pepper in a small bowl. Adjust the seasoning as per your taste.
  5. Pour the dressing over the salad and toss gently to ensure all the ingredients are well coated.
  6. Refrigerate the salad for at least 30 minutes before serving. This allows the flavors to meld together.
