Refreshing Tomato and Cucumber Noodle Salad
This vibrant and refreshing salad brings together the crispness of spiralized cucumber and the juiciness of fresh tomatoes. Tossed in a tangy homemade dressing and infused with the aromatic notes of fresh basil, it's a salad that's not just delicious but also visually appealing. Ingredients
- Cucumber
- 1 large
- Tomato
- 2 large
- Red onion
- 1/2, thinly sliced
- Fresh basil leaves
- 1/4 cup, loosely packed
- Olive oil
- 1/4 cup
- Lemon juice
- 2 tablespoons
- Honey
- 1 tablespoon
- Salt
- 1/2 teaspoon, or to taste
- Black pepper
- 1/4 teaspoon, freshly ground
Instructions
- Start by preparing the vegetables. Using a spiralizer, turn the cucumber into noodle-like strands. If you don't have a spiralizer, you can use a vegetable peeler to make thin strips instead.
- Slice the tomatoes into thin rounds. Thinly slice the red onion and roughly chop the fresh basil leaves.
- In a large bowl, combine the spiralized cucumber, tomato slices, red onion slices, and fresh basil. Toss gently until well combined.
- Prepare the dressing by whisking together the olive oil, lemon juice, honey, salt, and freshly ground pepper in a small bowl. Adjust the seasoning as per your taste.
- Pour the dressing over the salad and toss gently to ensure all the ingredients are well coated.
- Refrigerate the salad for at least 30 minutes before serving. This allows the flavors to meld together.
- Serve chilled and enjoy! You can also add some crumbled feta cheese or grilled chicken for extra protein.
