Tomato and Thyme Soup

Ingredients
- 2 tablespoons Olive oil
- 1 medium, chopped Onion
- 3 cloves, minced Garlic
- 6 cups, diced (or use canned tomatoes for convenience) Fresh tomatoes
- 4 cups Vegetable broth
- 2 teaspoons, chopped (plus extra for garnish) Fresh thyme

- 1/2 cup Heavy cream

Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic to the pot. Sauté until the onion is translucent and fragrant, about 5 minutes.
- Stir in the diced tomatoes, vegetable broth, fresh thyme, salt, and black pepper. Bring the mixture to a boil.
- Once boiling, reduce the heat to low and let the soup simmer for 20 minutes, allowing the flavors to meld.
- Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup in batches to a regular blender and blend until smooth.
- Return the pureed soup to the pot and stir in the heavy cream. Heat gently for an additional 5 minutes.
- Taste and adjust seasoning as needed. Serve hot, garnished with fresh thyme leaves if desired.
