Tomato and Thyme Soup

This tomato and thyme soup is a comforting and flavorful dish that is perfect for any time of the year.

Ingredients

  • Heavy cream (1/2 cup)
  • Salt and pepper (to taste)
  • Fresh thyme (1 tablespoon, chopped)
  • Vegetable broth (4 cups)
  • Tomatoes (6 large, diced)
  • Garlic (2 cloves, minced)
  • Onion (1 medium, chopped)
  • Olive oil (2 tablespoons)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
  3. Add the diced tomatoes, vegetable broth, fresh thyme, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
  4. Using an immersion blender or regular blender, puree the soup until smooth.
  5. Return the soup to the pot and stir in the heavy cream. Heat for an additional 5 minutes.
  6. Serve hot and garnish with fresh thyme leaves, if desired.
