Tomato Dosa

Ingredients
- Rice
- 1 cup
- Ripe tomatoes
- 2 medium-sized, chopped
- Red chillies
- 2-3, adjust to taste
- Asafoetida (hing)
- 1/4 teaspoon
- Salt
- to taste
- Oil
- 2 tablespoons (for cooking)
- Water
- as needed for blending
Instructions
- Begin by soaking the rice in water for 4 to 5 hours to allow it to soften adequately.
- After soaking, drain the water and transfer the soaked rice to a blender.
- Add the chopped ripe tomatoes, red chillies, asafoetida, and salt to the blender. Blend until you achieve a smooth batter, adding a little water if necessary to help with blending.
- Once the batter is ready, let it rest for 15-20 minutes to allow the flavors to meld together.
- Heat a non-stick pan over medium heat. Once hot, pour a ladle full of the batter in the center of the pan.
- Using the back of the ladle, gently spread the batter in a circular motion to create a thin dosa.
- Drizzle oil around the edges and on top of the dosa. Cook until the edges turn golden brown and the surface appears set.
- Carefully flip the dosa using a spatula and cook for an additional minute until the other side is golden brown.
- Remove the dosa from the pan and serve hot with coconut chutney or sambar.
