Tomato Dosa is a delightful South Indian crepe that bursts with the vibrant flavors of ripe tomatoes and aromatic spices. Ingredients

Rice
1 cup
Ripe tomatoes
2 medium-sized, chopped
Red chillies
2-3, adjust to taste
Asafoetida (hing)
1/4 teaspoon
Salt
to taste
Oil
2 tablespoons (for cooking)
Water
as needed for blending

Instructions

  1. Begin by soaking the rice in water for 4 to 5 hours to allow it to soften adequately.
  2. After soaking, drain the water and transfer the soaked rice to a blender.
  3. Add the chopped ripe tomatoes, red chillies, asafoetida, and salt to the blender. Blend until you achieve a smooth batter, adding a little water if necessary to help with blending.
  4. Once the batter is ready, let it rest for 15-20 minutes to allow the flavors to meld together.
  5. Heat a non-stick pan over medium heat. Once hot, pour a ladle full of the batter in the center of the pan.
  6. Using the back of the ladle, gently spread the batter in a circular motion to create a thin dosa.
  7. Drizzle oil around the edges and on top of the dosa. Cook until the edges turn golden brown and the surface appears set.
  8. Carefully flip the dosa using a spatula and cook for an additional minute until the other side is golden brown.
  9. Remove the dosa from the pan and serve hot with coconut chutney or sambar.
