Sweet and Tangy Tomato Jam

Ingredients
- Diced tomatoes
- 4 cups, fresh or canned
- Granulated sugar
- 1 1/2 cups
- Lemon juice
- 1/4 cup, freshly squeezed
- Salt
- 1/2 teaspoon
- Ground cloves
- 1/4 teaspoon
- Ground cinnamon
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon (optional for added depth)
Instructions
- In a large saucepan, combine the diced tomatoes, granulated sugar, lemon juice, salt, ground cloves, ground cinnamon, and black pepper (if using). Stir well to combine.
- Place the saucepan over medium heat and bring the mixture to a boil, stirring occasionally to prevent sticking.
- Once boiling, reduce the heat to low and allow the mixture to simmer for about 45-60 minutes. Stir frequently until the jam thickens to a jam-like consistency. A good test is to place a spoonful on a cold plate; if it holds its shape after a minute, it's ready.
- Remove the saucepan from heat and let the tomato jam cool completely in the pot.
- Once cooled, transfer the jam to sterilized jars, sealing them tightly. Store the tomato jam in the refrigerator for up to 3 weeks.
