Sweet and Tangy Tomato Jam

Instructions
- In a large saucepan, combine the diced tomatoes, granulated sugar, lemon juice, salt, ground cloves, ground cinnamon, and black pepper (if using). Stir well to combine.
- Place the saucepan over medium heat and bring the mixture to a boil, stirring occasionally to prevent sticking.
- Once boiling, reduce the heat to low and allow the mixture to simmer for about 45-60 minutes. Stir frequently until the jam thickens to a jam-like consistency. A good test is to place a spoonful on a cold plate; if it holds its shape after a minute, it's ready.
