Pie crust
1, store-bought or homemade
Tomatoes
4 cups, sliced (about 4-5 medium tomatoes)
Salt
1 teaspoon (for seasoning tomatoes)
Fresh basil
1/2 cup, chopped
Green onions
1/2 cup, sliced
Pepper
1/4 teaspoon, or to taste
Mayonnaise
1/2 cup
Mozzarella cheese
1 cup, shredded
Cheddar cheese
1 cup, shredded

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Place the pie crust in a 9-inch pie dish and set aside.
  3. Lay the tomato slices out on paper towels to drain excess moisture, then sprinkle with salt and let them sit for about 10 minutes. This helps to concentrate their flavor and keep the pie from becoming soggy.
  4. Layer the drained tomato slices, followed by the chopped basil and sliced green onions in the prepared pie crust.
  5. In a mixing bowl, combine the mayonnaise, shredded cheddar cheese, shredded mozzarella cheese, and pepper. Stir until well blended.
  6. Spread the cheese mixture evenly over the tomato layers in the pie crust.
