
Tomato Soup with Grilled Cheese Sandwich
This classic tomato soup is paired with a crispy grilled cheese sandwich for the ultimate comfort food meal.
Ingredients
- Cheddar cheese (8 slices)
- Bread (8 slices)
- Salt and pepper (to taste)
- Sugar (1 tablespoon)
- Chicken or vegetable broth (2 cups)
- Tomatoes (28 oz can, crushed)
- Garlic (2 cloves, minced)
- Onion (1 medium, chopped)
- Butter (4 tablespoons)
Instructions
- Melt 2 tablespoons of butter in a large pot over medium heat.
- Add the onion and garlic and cook until the onion is soft and translucent, about 5 minutes.
- Add the crushed tomatoes, broth, sugar, salt, and pepper. Bring to a boil, then reduce the heat and simmer for 20 minutes.
- While the soup is simmering, make the grilled cheese sandwiches. Preheat a skillet over medium heat.
- Butter one side of each slice of bread. Place a slice of cheese between two slices of bread, with the buttered sides facing out.
- Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
- Serve the soup hot with the grilled cheese sandwiches on the side.
