Classic Tomato Soup with Grilled Cheese Sandwich

Indulge in the comforting embrace of this classic tomato soup paired with a perfectly crispy grilled cheese sandwich. This timeless duo is a staple of American cuisine, often evoking memories of childhood and warm family gatherings. The rich, velvety tomato soup, infused with aromatic garlic and sweet onions, perfectly complements the gooey melted cheddar nestled between golden, buttery bread. Perfect for chilly evenings or a quick, satisfying lunch, this recipe brings warmth and nostalgia to your table.

Serves 4

Ingredients

Unsalted butter
4 tablespoons, divided (2 for the soup, 2 for grilling)
Onion
1 medium, diced
Garlic
2 cloves, minced
Crushed tomatoes
28 ounces (canned or fresh)
Chicken or vegetable broth
2 cups
Sugar
1 teaspoon
Salt
to taste
Black pepper
to taste
Cheddar cheese
8 ounces, sliced
Bread
4 slices (your choice of bread)

Instructions

  1. In a large pot, melt 2 tablespoons of butter over medium heat.
  2. Add the diced onion and minced garlic, cooking until the onion is soft and translucent, about 5 minutes.
  3. Stir in the crushed tomatoes, broth, sugar, salt, and pepper. Bring to a boil, then reduce heat and let simmer for 20 minutes to allow the flavors to meld.
  4. While the soup is simmering, prepare the grilled cheese sandwiches. Preheat a skillet over medium heat.
  5. Butter one side of each slice of bread with the remaining butter. Place a slice of cheddar cheese between two slices of bread, ensuring the buttered sides are facing out.
  6. Place the sandwiches in the skillet and cook until the bread is golden brown and the cheese is melted, about 3-4 minutes per side. Adjust the heat as needed to prevent burning.
  7. Once the soup is ready, you may blend it for a smoother texture using an immersion blender, or leave it chunky, depending on your preference.
  8. Serve the hot tomato soup in bowls, accompanied by the grilled cheese sandwiches cut in half for easy dipping.

Tips

  • 💡 For added flavor, consider adding a splash of balsamic vinegar or a pinch of red pepper flakes to the soup.
  • 💡 Use different types of cheese, such as Gruyere or mozzarella, for a unique twist on the grilled cheese.
  • 💡 Feel free to add fresh herbs like basil or parsley to the soup just before serving for an extra layer of flavor.
