Torciglione is a delightful traditional Italian dessert that hails from the enchanting region of Umbria. This unique snake-shaped cake is not only visually appealing but also a true treat for the palate, combining crunchy almonds, sweet sugar, and airy egg whites into a harmonious blend. Its origins are steeped in history, often associated with festive celebrations and family gatherings, making it a beloved recipe passed down through generations.

Servings: 8

Ingredients

Almonds
1 cup, finely chopped
Granulated sugar
1 cup
Egg whites
3 large
Vanilla extract
1 teaspoon
Lemon zest
1 tablespoon
Salt
a pinch

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the finely chopped almonds and granulated sugar, ensuring they are well mixed.
  3. In a separate clean bowl, beat the egg whites using an electric mixer until stiff peaks form. This will give your torciglione its light and airy texture.
  4. Gently fold the egg whites into the almond-sugar mixture, being careful not to deflate the egg whites. Add the lemon zest, vanilla extract, and a pinch of salt, folding until just combined.
  5. Using a spatula, shape the mixture into a long, snake-like shape on the prepared baking sheet. Make sure to leave enough space between each torciglione as they will expand slightly while baking.
  6. Bake in the preheated oven for about 30 minutes, or until the torciglione turns a beautiful golden brown and is firm to the touch.
  7. Once baked, remove from the oven and let the torciglione cool completely on a wire rack before serving. This allows the flavors to meld and the texture to set.
