Instructions
- Place the pork loin, garlic cloves, and bay leaves in a large pot. Cover with water and let it simmer for approximately 2 hours, or until the pork is tender and easily shredded.
- After the pork is cooked, remove it from the pot. Let it cool and then shred it into bite-sized pieces.
- For the sauce, blend the tomatoes, arbol chilies, and finely chopped half onion until smooth. Pour the sauce into a separate pot and let it simmer for about 20 minutes.
