Instructions

  1. Place the pork loin, garlic cloves, and bay leaves in a large pot. Cover with water and let it simmer for approximately 2 hours, or until the pork is tender and easily shredded.
  2. After the pork is cooked, remove it from the pot. Let it cool and then shred it into bite-sized pieces.
  3. For the sauce, blend the tomatoes, arbol chilies, and finely chopped half onion until smooth. Pour the sauce into a separate pot and let it simmer for about 20 minutes.
  4. Cut the bread rolls in half and stuff them with the shredded pork. Place the stuffed sandwiches in a deep dish.
  5. Pour the simmered sauce over the sandwiches, ensuring they are completely covered. This is where the name 'drowned sandwich' comes from.
  6. Finally, garnish with the sliced half onion, shredded cabbage, radish slices, and a squeeze of lime. Serve immediately for the best taste.
