Ingredients
- Oil

- Bolillo rolls
- 4, sliced in half
- Mayonnaise
- 1/2 cup
- Lettuce
- 1 cup, shredded
- Tomato
- 1 large, sliced
- Avocado
- 1, sliced
- Refried beans
- 1 cup, warmed
- Eggs
- 2, beaten
- Bread crumbs
- 1 cup
- Beef or chicken cutlets
- 4, pounded thin
Instructions
- In a shallow bowl, beat the eggs until well blended. Place the bread crumbs in another shallow bowl.
- Dip each cutlet into the beaten eggs, ensuring they are well-coated, then dredge them in the bread crumbs until fully covered.
- In a large skillet, heat enough oil over medium heat to cover the bottom of the pan. Fry each cutlet for about 3-4 minutes on each side, or until golden brown and cooked through. Drain on paper towels to remove excess oil.
- While the cutlets are cooling slightly, prepare the bolillo rolls by slicing them in half. Spread a generous layer of mayonnaise on one side and warm refried beans on the other side of each roll.
- Place a crispy fried cutlet on the bottom half of each bolillo roll.
- Top the cutlets with shredded lettuce, tomato slices, and avocado slices.
