Oil
for frying
Bolillo rolls
4, sliced in half
Mayonnaise
1/2 cup
Lettuce
1 cup, shredded
Tomato
1 large, sliced
Avocado
1, sliced
Refried beans
1 cup, warmed
Eggs
2, beaten
Bread crumbs
1 cup
Beef or chicken cutlets
4, pounded thin

Instructions

  1. In a shallow bowl, beat the eggs until well blended. Place the bread crumbs in another shallow bowl.
  2. Dip each cutlet into the beaten eggs, ensuring they are well-coated, then dredge them in the bread crumbs until fully covered.
  3. In a large skillet, heat enough oil over medium heat to cover the bottom of the pan. Fry each cutlet for about 3-4 minutes on each side, or until golden brown and cooked through. Drain on paper towels to remove excess oil.
  4. While the cutlets are cooling slightly, prepare the bolillo rolls by slicing them in half. Spread a generous layer of mayonnaise on one side and warm refried beans on the other side of each roll.
  5. Place a crispy fried cutlet on the bottom half of each bolillo roll.
  6. Top the cutlets with shredded lettuce, tomato slices, and avocado slices.
  7. Cover with the top half of the roll, pressing down gently to hold everything together.
  8. Serve immediately while the cutlets are still warm and enjoy your delicious Torta de Milanesa.
