Instructions

  2. Add the eggs and whisk until well combined.
  3. Add the shrimp to the batter and mix until they are evenly coated.
  4. Heat the olive oil in a non-stick skillet over medium heat.
  5. Pour the shrimp and egg mixture into the skillet and spread it evenly.
  6. Cook for about 3-4 minutes on each side, or until golden brown and cooked through.
  7. Remove the tortilla from the skillet and let it cool for a few minutes.
  8. Cut the tortilla into wedges and serve warm.
