Crispy Tostones

- 2, peeled and cut into 1-inch thick slices Green plantains
- for frying (about 2 cups) Vegetable oil

Instructions
- Peel the plantains and cut them into 1-inch thick slices.
- Heat the vegetable oil in a large skillet over medium heat until shimmering.
- Fry the plantain slices in the hot oil for about 2-3 minutes on each side, or until they turn a beautiful golden brown.
- Remove the fried plantains from the skillet and place them on a paper towel-lined plate to drain excess oil.
- Using a tostonera or the bottom of a glass, gently flatten each fried plantain slice to about 1/4-inch thickness.
- Increase the heat to medium-high and return the oil to the skillet.
- Fry the flattened plantains for another 2-3 minutes on each side, or until they are crispy and golden brown.
- Remove the tostones from the skillet and place them on a paper towel-lined plate to absorb any remaining oil.
- While they are still hot, sprinkle the tostones with salt and garlic powder to enhance their flavor.
- Serve the tostones with a dipping sauce of your choice, such as a zesty garlic sauce or a spicy aioli, and garnish with fresh cilantro if desired.
