Ingredients

Green plantains
2, peeled and cut into 1-inch thick slices
Vegetable oil
enough for frying (approximately 2 cups)
Salt
to taste
Black pepper
to taste
Onion
1 medium, chopped
Tomatoes
2 medium, diced
Garlic
2 cloves, minced
Cilantro
1/4 cup, chopped

Instructions

  1. Peel the green plantains and cut them into 1-inch thick slices.
  2. In a large frying pan, heat enough vegetable oil over medium-high heat to submerge the plantain slices (about 2 inches deep).
  3. Once the oil is hot, add the plantain slices and fry until they are golden brown, about 3 minutes on each side. Use a slotted spoon to remove the fried plantains from the pan and drain them on paper towels.
  4. Using a tostonera or the bottom of a glass, gently flatten each fried plantain slice to about 1/4-inch thick.
  5. Return the flattened plantains to the hot oil and fry again until they are crispy, about 2 minutes on each side. Remove from the pan and drain on paper towels again, seasoning with salt immediately.
  6. In a separate skillet, heat a small amount of oil over medium heat. Add the chopped onion and cook until soft and translucent, about 5 minutes.
  7. Stir in the diced tomatoes, minced garlic, and chopped cilantro. Cook the mixture, stirring occasionally, until the tomatoes have softened and the sauce has thickened, about 10 minutes. Season with salt and pepper to taste.
  8. Serve the crispy tostones topped generously with the hogao sauce, garnished with additional cilantro if desired.
