Tostones Rellenos
Tostones Rellenos are a vibrant and flavorful Puerto Rican dish that showcases the tropical delight of green plantains. - 2, peeled and cut into 1-inch thick slices Green plantains

- 2 cloves, minced Garlic
- 1 small, diced Onion
- 1 small, diced (any color) Bell pepper
- 1 cup, peeled and deveined Shrimp
- 1/2 cup Tomato sauce
- 1 cup (mozzarella or cheddar) Shredded cheese

Instructions
- In a large frying pan, heat enough vegetable oil over medium heat to cover the bottom of the pan.
- Add the plantain slices to the hot oil and fry for about 3-4 minutes on each side, or until golden brown.
- Using a tostonera or the bottom of a glass, carefully flatten each fried plantain slice to about 1/2 inch thick.
- Return the flattened plantains to the hot oil and fry again for an additional 2-3 minutes until they are crispy. Remove from the pan and sprinkle with salt.
- In a separate pan, sauté the minced garlic, diced onion, and bell pepper over medium heat until soft, about 4-5 minutes.
- Add the shrimp to the pan and cook until they turn pink, about 3-4 minutes. Stir in the tomato sauce and let everything cook together for an additional 2-3 minutes until heated through.
- Spoon the shrimp mixture generously onto each fried tostone and top with shredded cheese.
- Place the tostones in the oven under the broiler for 2-3 minutes, or until the cheese is bubbly and slightly golden.
- Serve the tostones rellenos warm, garnished with fresh cilantro if desired.
