Ingredients

Original recipe serves 4

Green plantains
2, peeled and cut into 1-inch thick slices
Vegetable oil
for frying
Salt
to taste
Garlic
2 cloves, minced
Onion
1 small, diced
Bell pepper
1 small, diced (any color)
Shrimp
1 cup, peeled and deveined
Tomato sauce
1/2 cup
Shredded cheese
1 cup (mozzarella or cheddar)

Instructions

  1. In a large frying pan, heat enough vegetable oil over medium heat to cover the bottom of the pan.
  2. Add the plantain slices to the hot oil and fry for about 3-4 minutes on each side, or until golden brown.
  3. Using a tostonera or the bottom of a glass, carefully flatten each fried plantain slice to about 1/2 inch thick.
  4. Return the flattened plantains to the hot oil and fry again for an additional 2-3 minutes until they are crispy. Remove from the pan and sprinkle with salt.
  5. In a separate pan, sauté the minced garlic, diced onion, and bell pepper over medium heat until soft, about 4-5 minutes.
  6. Add the shrimp to the pan and cook until they turn pink, about 3-4 minutes. Stir in the tomato sauce and let everything cook together for an additional 2-3 minutes until heated through.
  7. Spoon the shrimp mixture generously onto each fried tostone and top with shredded cheese.
  8. Place the tostones in the oven under the broiler for 2-3 minutes, or until the cheese is bubbly and slightly golden.
  9. Serve the tostones rellenos warm, garnished with fresh cilantro if desired.
