Ingredients
- Puff pastry
- 1 package (approximately 500g)
- Almond paste
- 200g
- Egg yolks
- 4
- Sugar
- 150g
- Water
- 100ml
- Lemon zest
- 1 tablespoon
- Cinnamon
- 1 teaspoon
- Powdered sugar
- for dusting (optional)
Instructions
- Preheat your oven to 200°C (390°F) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the puff pastry into a large rectangle, approximately 1/8 inch thick. Cut into 10 equal squares, about 10cm x 10cm each.
- In a saucepan, combine the sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves. Continue to boil until the mixture thickens slightly, resembling syrup.
- Remove the saucepan from heat and stir in the almond paste, egg yolks, lemon zest, and cinnamon until well combined and smooth.
- Spoon a generous amount of the almond filling onto the center of each puff pastry square. Fold the pastry over the filling to form a pillow shape, pressing the edges to seal tightly.
- Place the filled pastries on the prepared baking sheet. Bake in the preheated oven for 15-20 minutes, or until golden brown and puffed.
- Once baked, remove from the oven and allow to cool slightly. Dust with powdered sugar, if desired, before serving.
