Tres Leches Pancakes

These pancakes are a sweet and fluffy twist on the traditional Tres Leches cake. They're soaked in a sweet milk mixture and topped with whipped cream and a sprinkle of cinnamon.

Ingredients

  • Cinnamon (to taste)
  • Whipped cream (to taste)
  • Heavy cream (1/2 cup)
  • Evaporated milk (1/2 cup)
  • Sweetened condensed milk (1/2 cup)
  • Eggs (2)
  • Milk (1 cup)
  • Pancake mix (2 cups)

Instructions

  1. In a large bowl, mix together the pancake mix, milk, and eggs until smooth.
  2. Heat a non-stick skillet over medium heat. Pour 1/4 cup of the pancake batter onto the skillet and cook until bubbles form on the surface, then flip and cook until golden brown. Repeat with the remaining batter.
  3. In a separate bowl, whisk together the sweetened condensed milk, evaporated milk, and heavy cream.
  4. Poke holes in the pancakes with a fork and pour the milk mixture over them, allowing it to soak in.
  5. Top the pancakes with whipped cream and a sprinkle of cinnamon before serving.
