Tres Leches Pancakes
These pancakes are a sweet and fluffy twist on the traditional Tres Leches cake. They're soaked in a sweet milk mixture and topped with whipped cream and a sprinkle of cinnamon.
Ingredients
- Cinnamon (to taste)
- Whipped cream (to taste)
- Heavy cream (1/2 cup)
- Evaporated milk (1/2 cup)
- Sweetened condensed milk (1/2 cup)
- Eggs (2)
- Milk (1 cup)
- Pancake mix (2 cups)
Instructions
- In a large bowl, mix together the pancake mix, milk, and eggs until smooth.
- Heat a non-stick skillet over medium heat. Pour 1/4 cup of the pancake batter onto the skillet and cook until bubbles form on the surface, then flip and cook until golden brown. Repeat with the remaining batter.
- In a separate bowl, whisk together the sweetened condensed milk, evaporated milk, and heavy cream.
- Poke holes in the pancakes with a fork and pour the milk mixture over them, allowing it to soak in.
- Top the pancakes with whipped cream and a sprinkle of cinnamon before serving.
