
Triple Chocolate Cheesecake

Ingredients
- Whipping cream (1/2 cup)
- Semi (sweet chocolate chips - 1/2 cup)
- Heavy cream (1 cup)
- Vanilla extract (1 teaspoon)
- Eggs (3)
- Semi (sweet chocolate - 8 oz, melted)
- Cocoa powder (1/2 cup)
- Granulated sugar (1 cup)
- Cream cheese (24 oz (3 packages), softened)
- Unsalted butter (1/2 cup, melted)
- Chocolate sandwich cookies (24 cookies, crushed)
Instructions
- Preheat the oven to 325°F (163°C).
- In a mixing bowl, combine the crushed chocolate sandwich cookies and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
- In a separate mixing bowl, beat the cream cheese, granulated sugar, and cocoa powder until smooth and creamy.
- Add the melted semi-sweet chocolate, eggs, and vanilla extract to the cream cheese mixture. Mix until well combined.
- Pour the chocolate cheesecake filling over the crust in the springform pan.
- Bake for 50-60 minutes, or until the center is set and the edges are slightly puffed.
- Remove the cheesecake from the oven and let it cool to room temperature.
- In a small saucepan, heat the heavy cream until it just begins to simmer. Remove from heat and pour over the semi-sweet chocolate chips in a heatproof bowl. Let it sit for a minute, then stir until smooth and glossy to make the ganache.
- Pour the ganache over the cooled cheesecake, spreading it evenly with a spatula.
- Refrigerate the cheesecake for at least 4 hours, or overnight, to set.
- Serve chilled and enjoy!
