- Parmesan cheese
- 1/2 cup, grated (plus extra for garnish)
- Truffle oil
- 2 tablespoons (plus extra for drizzling)
- Salt

Instructions
- In a large, heavy-bottomed pan, heat the olive oil over medium heat.
- Add the finely chopped onion and minced garlic, cooking until the onion becomes translucent, about 5 minutes.
- Stir in the Arborio rice, ensuring each grain is coated in oil. Toast the rice for 2-3 minutes until it becomes slightly translucent around the edges.
- Pour in the white wine, stirring continuously until it is fully absorbed by the rice.
- Begin adding the warmed chicken broth, one cup at a time, stirring constantly. Wait until each cup is fully absorbed before adding the next. This process should take about 20-25 minutes.
- Once all the broth has been absorbed and the rice is al dente and creamy, remove the pan from heat.
- Fold in the grated Parmesan cheese and drizzle with truffle oil. Season with salt and pepper to taste.
