Arborio rice
1 cup
White wine
1/2 cup
Chicken broth
4 cups, warmed
Parmesan cheese
1/2 cup, grated (plus extra for garnish)
Truffle oil
2 tablespoons (plus extra for drizzling)
Salt
to taste
Black pepper
to taste

Instructions

  1. In a large, heavy-bottomed pan, heat the olive oil over medium heat.
  2. Add the finely chopped onion and minced garlic, cooking until the onion becomes translucent, about 5 minutes.
  3. Stir in the Arborio rice, ensuring each grain is coated in oil. Toast the rice for 2-3 minutes until it becomes slightly translucent around the edges.
  4. Pour in the white wine, stirring continuously until it is fully absorbed by the rice.
  5. Begin adding the warmed chicken broth, one cup at a time, stirring constantly. Wait until each cup is fully absorbed before adding the next. This process should take about 20-25 minutes.
  6. Once all the broth has been absorbed and the rice is al dente and creamy, remove the pan from heat.
  7. Fold in the grated Parmesan cheese and drizzle with truffle oil. Season with salt and pepper to taste.
