Ingredients

Original recipe serves 4

Salt
1/2 teaspoon or to taste
Black pepper
1/2 teaspoon or to taste
Olive oil
1/4 cup
Lemon juice
2 tablespoons
Fresh parsley
1/4 cup, finely chopped
Feta cheese
1/2 cup, crumbled
Olives
1/2 cup, pitted and sliced
Bell pepper
1 large, thinly sliced
Red onion
1 small, thinly sliced
Tomato
2 medium, diced
Cucumber
1 large, diced
Lettuce
4 cups, torn into bite-sized pieces

Instructions

  1. In a large salad bowl, combine the lettuce, cucumber, tomato, red onion, bell pepper, olives, and feta cheese.
  2. In a separate small bowl, prepare the dressing. Combine the olive oil, lemon juice, salt, and pepper. Whisk until well blended.
  3. Drizzle the prepared dressing over the mixed salad ingredients. Toss gently until all ingredients are evenly coated with the dressing.
  4. Garnish with the finely chopped fresh parsley. Serve immediately to enjoy the salad at its freshest and crunchiest.
