Canned tuna
1 can, drained
Green olives
1 cup, pitted
Garlic
2 cloves
Lemon juice
1 tablespoon
Extra virgin olive oil
2 tablespoons
Capers
1 tablespoon
Fresh parsley
1 tablespoon, chopped
Salt
to taste
Pepper
to taste

Instructions

  1. Combine the drained canned tuna, pitted green olives, garlic cloves, lemon juice, extra virgin olive oil, capers, chopped fresh parsley, salt, and pepper in a food processor.
  2. Pulse the mixture until it reaches your desired consistency. For a chunkier tapenade, pulse less; for a smoother spread, pulse more.
  3. Taste the tapenade and adjust the seasoning if needed. You may want to add more salt, pepper, or lemon juice according to your preference.
  4. Transfer the tapenade to a serving bowl. It can be served immediately, but for best flavor, cover and refrigerate it for an hour to let the flavors meld together.
  5. Serve the tapenade on toasted bread slices as an appetizer, or use it as a gourmet spread for sandwiches. It can also be tossed with pasta or used as a topping for salads.
