This delicious tuna and green olive tapenade is a perfect appetizer or spread for sandwiches.

Ingredients

  • Salt and pepper (to taste)
  • Fresh parsley (2 tablespoons, chopped)
  • Capers (1 tablespoon)
  • Extra virgin olive oil (2 tablespoons)
  • Lemon juice (2 tablespoons)
  • Garlic (2 cloves)
  • Green olives (1 cup, pitted)
  • Canned tuna (2 cans (5 oz each), drained)

Instructions

  1. In a food processor, combine the tuna, green olives, garlic, lemon juice, olive oil, capers, parsley, salt, and pepper.
  2. Pulse until well combined and the mixture reaches your desired consistency.
  3. Taste and adjust the seasoning if needed.
