Servings: 4

Ingredients

Olive oil
2 tablespoons
Onion
1 medium, finely chopped
Garlic
3 cloves, minced
Canned tuna
2 cans (5 oz each), drained and flaked
Canned diced tomatoes
2 cans (14.5 oz each)
Tomato paste
2 tablespoons
Dried oregano
1 teaspoon
Dried basil
1 teaspoon
Red pepper flakes
1/2 teaspoon (adjust to taste)
Salt
to taste
Black pepper
to taste
Cooked pasta
12 ounces (spaghetti, penne, or your choice)
Fresh parsley
1/4 cup, chopped
Grated Parmesan cheese
1/2 cup, for serving

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and minced garlic, cooking until softened and fragrant, about 5 minutes.
  3. Incorporate the flaked tuna into the skillet, breaking it up with a spoon. Cook for an additional 2-3 minutes to warm the tuna.
  4. Stir in the canned diced tomatoes, tomato paste, dried oregano, dried basil, red pepper flakes, salt, and black pepper. Mix well to combine the flavors.
  5. Reduce the heat and let the sauce simmer for 10 minutes, allowing it to thicken and the flavors to meld, stirring occasionally.
  6. While the sauce simmers, cook the pasta according to package instructions until al dente. Drain and set aside.
  7. Once the sauce is ready, add the cooked pasta to the skillet, tossing gently to coat the pasta evenly with the sauce.
  8. Cook for an additional 2-3 minutes over low heat until the pasta is heated through.
  9. Remove from heat and garnish with fresh parsley and a generous sprinkle of grated Parmesan cheese.
  10. Serve hot and enjoy your Mediterranean delight!
