Italian Turkey Meatballs with Zoodles

Indulge your taste buds in an Italian-inspired, low-carb, and healthful feast. Our dish features succulent turkey meatballs, seasoned with a blend of Italian herbs and spices, served over a bed of fresh zucchini noodles, or 'zoodles'. Topped off with a rich marinara sauce and a sprinkle of Parmesan, this dish is more than a meal, it's a journey to the heart of Italy right from your kitchen.

Ingredients

Parmesan cheese
1/2 cup, grated
Marinara sauce
2 cups
Zucchini
4, medium-sized
Olive oil
2 tablespoons
Salt and pepper
to taste
Italian seasoning
1 tablespoon
Garlic
3 cloves, minced
Egg

Ground turkey
1 pound

Instructions

  1. In a large bowl, combine the ground turkey, egg, minced garlic, Italian seasoning, and salt and pepper to taste. Mix until the ingredients are well incorporated.
  2. Shape the mixture into 1-inch meatballs and set them aside.
  3. Heat olive oil in a large skillet over medium heat. Add the meatballs to the skillet and cook, turning occasionally, until they are evenly browned, about 10 minutes.
  4. Pour the marinara sauce into the skillet with the meatballs. Reduce the heat to low and let it simmer, stirring occasionally, until the meatballs are cooked through, about 10 more minutes.
  5. While the meatballs are simmering, use a spiralizer to turn the zucchini into noodles.
  6. Place the zoodles on plates, top with the turkey meatballs and sauce, and sprinkle with the grated Parmesan cheese before serving.

Tips

  • 💡 If you don't have a spiralizer, you can also use a peeler to create thin zucchini ribbons.
  • 💡 For a vegan version, replace the turkey with a plant-based meat substitute and the Parmesan cheese with nutritional yeast.
