Cilantro
1/4 cup, chopped

Avocado

Flour tortillas

Instructions

  1. Heat a large skillet over medium heat. Add the turkey sausage and cook until browned. Remove the sausage from the skillet and set it aside.
  2. In the same skillet, add the sweet potatoes, red bell pepper, onion, and garlic. Cook over medium heat until the sweet potatoes are tender, which should take about 10 minutes.
  3. Return the cooked turkey sausage to the skillet. Add the cumin, chili powder, salt, and pepper. Stir everything together and cook for an additional 2 minutes to allow the flavors to meld together.
  4. While the mixture is cooking, warm the flour tortillas in a separate skillet over low heat or in the microwave for 10-15 seconds until they are soft and pliable.
  5. Divide the turkey sausage and sweet potato mixture evenly among the warmed tortillas.
  6. Top each burrito with sliced avocado, a generous dollop of salsa, and a sprinkling of chopped cilantro.
  7. Fold in the sides of the tortilla over the filling, then roll it up tightly to form the burrito. Ensure the ends are tucked in well to prevent the filling from spilling out.
