Turkish Eggplant Dip (Baba Ganoush)

Ingredients
- Eggplants
- 2 large
- Olive oil
- 2 tablespoons, plus more for drizzling
- Tahini
- 1/4 cup
- Garlic
- 2 cloves, minced
- Lemon juice
- 2 tablespoons
- Salt
- 1/2 teaspoon, or to taste
- Fresh parsley
- 2 tablespoons, chopped (for garnish)
- Pomegranate seeds
- 1/4 cup (for garnish)
- Pita bread
- for serving
Instructions
- Preheat the oven to 400°F (200°C).
- Prick the eggplants with a fork in several places to allow steam to escape. Place them on a baking sheet lined with parchment paper.
- Roast the eggplants in the oven for 30-40 minutes, or until the skin is charred and the flesh is soft to the touch.
- Remove the eggplants from the oven and let them cool for about 15 minutes. Once cooled, carefully peel off the charred skin and discard.
- In a food processor, combine the roasted eggplant flesh, tahini, minced garlic, lemon juice, olive oil, and salt. Blend until smooth and creamy, adjusting seasoning to taste.
- Transfer the Baba Ganoush to a serving bowl. Drizzle with a little extra olive oil and garnish with chopped parsley and pomegranate seeds.
- Serve the Turkish eggplant dip with warm pita bread or your favorite crackers. Enjoy!
