Ingredients

Eggplants
2 large
Olive oil
2 tablespoons, plus more for drizzling
Tahini
1/4 cup
Garlic
2 cloves, minced
Lemon juice
2 tablespoons
Salt
1/2 teaspoon, or to taste
Fresh parsley
2 tablespoons, chopped (for garnish)
Pomegranate seeds
1/4 cup (for garnish)
Pita bread
for serving

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prick the eggplants with a fork in several places to allow steam to escape. Place them on a baking sheet lined with parchment paper.
  3. Roast the eggplants in the oven for 30-40 minutes, or until the skin is charred and the flesh is soft to the touch.
  4. Remove the eggplants from the oven and let them cool for about 15 minutes. Once cooled, carefully peel off the charred skin and discard.
  5. In a food processor, combine the roasted eggplant flesh, tahini, minced garlic, lemon juice, olive oil, and salt. Blend until smooth and creamy, adjusting seasoning to taste.
  6. Transfer the Baba Ganoush to a serving bowl. Drizzle with a little extra olive oil and garnish with chopped parsley and pomegranate seeds.
  7. Serve the Turkish eggplant dip with warm pita bread or your favorite crackers. Enjoy!
