Tuwo Shinkafa

Ingredients
- Water
- 4 cups
- Rice flour
- 2 cups
- Salt
- 1 teaspoon (or to taste)
Instructions
- In a large pot, bring 4 cups of water to a rolling boil over medium-high heat.
- Gradually add 2 cups of rice flour to the boiling water, stirring continuously with a wooden spoon or spatula to prevent lumps from forming.
- Once all the flour is incorporated, reduce the heat to low and cover the pot with a lid. Allow the mixture to simmer for 10-15 minutes, stirring occasionally to ensure an even consistency.
- Add 1 teaspoon of salt (or to taste) and continue to cook for an additional 5 minutes, or until the tuwo shinkafa reaches a thick and smooth consistency that slightly pulls away from the sides of the pot.
- Remove from heat and let it cool slightly before serving. You can shape the tuwo shinkafa into balls or serve it directly from the pot.
- Serve tuwo shinkafa with your choice of Nigerian soup, such as Egusi Soup or Okra Soup, for a complete and satisfying meal.
