Ingredients

Udon noodles
2 packs
Vegetable oil
2 tablespoons
Onion
1, finely chopped
Carrot
1, peeled and thinly sliced
Bell pepper
1, seeds removed and thinly sliced
Garlic
2 cloves, minced
Curry powder
1 tablespoon
Coconut milk
1 can (400ml)
Soy sauce
2 tablespoons
Sugar
1 teaspoon
Salt
to taste
Cilantro
a handful, chopped for garnish

Instructions

  1. Prepare the Udon noodles as per the package instructions. Once cooked, drain them and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium heat.
  3. Add the finely chopped onion, thinly sliced carrot, sliced bell pepper, and minced garlic to the pan. Stir-fry the vegetables for about 5 minutes or until they become tender.
  4. Stir in the curry powder and continue to cook for an additional minute, making sure to constantly stir so the curry powder is evenly distributed.
  5. Pour the coconut milk into the pan along with the soy sauce and sugar. Stir well until all the ingredients are well combined.
  6. Allow the sauce to simmer for about 5 minutes or until it begins to thicken slightly.
  7. Add the cooked Udon noodles to the pan, tossing them until they are fully coated in the creamy coconut curry sauce.
  8. Season the dish with salt to your liking.
