Udon Noodles with Creamy Coconut Curry Sauce

Ingredients
- 2 packs Udon noodles
- 2 tablespoons Vegetable oil
- 1, finely chopped Onion
- 1, peeled and thinly sliced Carrot
- 1, seeds removed and thinly sliced Bell pepper
- 2 cloves, minced Garlic
- 1 tablespoon Curry powder
- 1 can (400ml) Coconut milk
- 2 tablespoons Soy sauce
- 1 teaspoon Sugar
- to taste Salt
- a handful, chopped for garnish Cilantro

Instructions
- Prepare the Udon noodles as per the package instructions. Once cooked, drain them and set aside.
- In a large pan or wok, heat the vegetable oil over medium heat.
- Add the finely chopped onion, thinly sliced carrot, sliced bell pepper, and minced garlic to the pan. Stir-fry the vegetables for about 5 minutes or until they become tender.
- Stir in the curry powder and continue to cook for an additional minute, making sure to constantly stir so the curry powder is evenly distributed.
- Pour the coconut milk into the pan along with the soy sauce and sugar. Stir well until all the ingredients are well combined.
- Allow the sauce to simmer for about 5 minutes or until it begins to thicken slightly.
- Add the cooked Udon noodles to the pan, tossing them until they are fully coated in the creamy coconut curry sauce.
- Season the dish with salt to your liking.
