 - 3 tablespoons
 - Mirin
 - 2 tablespoons
 - Green onions
 - 2, sliced (for garnish)
 - Toasted sesame seeds
 - 1 tablespoon (for garnish)
 
Instructions
- Cook the udon noodles according to the package instructions. Drain and set aside, ensuring to toss with a little sesame oil to prevent sticking.
 - In a large skillet, heat the sesame oil over medium heat until shimmering.
 - Add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to burn it.
 - Add the sliced mushrooms to the skillet and cook for about 5 minutes, stirring occasionally, until the mushrooms are tender and golden brown.
 - In a small bowl, whisk together the soy sauce and mirin until well combined. Pour the sauce over the cooked mushrooms and stir to coat evenly.
 - Add the cooked udon noodles to the skillet with the mushroom sauce and toss everything together. Cook for an additional 2-3 minutes, allowing the noodles to absorb the flavors and heat through.
