Udon noodles
400g, dried
Sake
1/2 cup
Soy sauce
1/4 cup
Mirin
2 tablespoons
Sugar
1 tablespoon
Vegetable oil
2 tablespoons
Green onions
2, sliced
Toasted sesame seeds
1 tablespoon

Instructions

  1. Cook the udon noodles as per the package instructions. Once cooked, drain and keep them aside.
  2. To prepare the sake sauce, combine sake, soy sauce, mirin, and sugar in a small saucepan. Place it over medium heat and bring the mixture to a simmer. Cook this for 2-3 minutes, until the sugar has fully dissolved and the sauce has thickened slightly.
  3. In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the cooked udon noodles to the skillet and stir-fry for 2-3 minutes until they are heated through.
  4. Pour the prepared sake sauce over the stir-fried udon noodles. Toss the noodles well to ensure they are evenly coated in the sauce. Allow this to cook for an additional 1-2 minutes to ensure the sauce is thoroughly incorporated.
  5. Remove the skillet from heat. Garnish the udon noodles with sliced green onions and a sprinkle of toasted sesame seeds before serving.
