Ingredients
- Nori sheets
- 2 sheets, shredded
- Green onions
- 2, sliced
- Fresh ginger
- 1 tablespoon, grated
- Mirin
- 2 tablespoons
- Soy sauce
- 3 tablespoons
- Fish stock
- 4 cups
- Mussels
- 1 cup, cleaned
- Scallops
- 1 cup, cleaned
- Shrimp
- 1 cup, peeled and deveined
- Udon noodles
- 2 servings (about 8 oz)
Instructions
- In a large pot, bring the fish stock to a boil over medium-high heat.
- Once boiling, add the soy sauce, mirin, and grated ginger to the pot. Reduce the heat and let it simmer for 5 minutes to allow the flavors to meld.
- While the broth is simmering, cook the udon noodles according to the package instructions, then drain and set aside.
- Add the shrimp, scallops, and mussels to the simmering broth. Cook for 3-4 minutes, or until the seafood is cooked through and the mussels have opened.
- Divide the cooked udon noodles into serving bowls.
- Ladle the seafood broth and seafood over the noodles in each bowl.
- Garnish with sliced green onions and shredded nori sheets for added flavor and presentation.
