Ingredients

Nori sheets
2 sheets, shredded
Green onions
2, sliced
Fresh ginger
1 tablespoon, grated
Mirin
2 tablespoons
Soy sauce
3 tablespoons
Fish stock
4 cups
Mussels
1 cup, cleaned
Scallops
1 cup, cleaned
Shrimp
1 cup, peeled and deveined
Udon noodles
2 servings (about 8 oz)

Instructions

  1. In a large pot, bring the fish stock to a boil over medium-high heat.
  2. Once boiling, add the soy sauce, mirin, and grated ginger to the pot. Reduce the heat and let it simmer for 5 minutes to allow the flavors to meld.
  3. While the broth is simmering, cook the udon noodles according to the package instructions, then drain and set aside.
  4. Add the shrimp, scallops, and mussels to the simmering broth. Cook for 3-4 minutes, or until the seafood is cooked through and the mussels have opened.
  5. Divide the cooked udon noodles into serving bowls.
