Udon with Creamy Soy Milk Sauce

Ingredients
- Udon noodles
- 8 oz
- Soy milk
- 1 cup
- Miso paste
- 2 tablespoons
- Soy sauce
- 2 tablespoons
- Mirin
- 1 tablespoon
- Fresh spinach
- 2 cups, washed and roughly chopped
- Shiitake mushrooms
- 1 cup, sliced
- Green onions
- 3, sliced
- Sesame seeds
- 2 tablespoons, toasted
Instructions
- Bring a large pot of water to a boil and cook the udon noodles according to the package instructions. Drain and set aside.
- In a small saucepan, combine the soy milk, miso paste, soy sauce, and mirin. Whisk until smooth and heat over medium heat until warmed through, stirring occasionally to prevent sticking.
- In a separate pan, heat a drizzle of oil over medium heat. Add the sliced green onions and shiitake mushrooms. Sauté for about 3-4 minutes, or until the mushrooms are tender.
- Add the chopped spinach to the pan and cook for an additional 2 minutes, or until wilted.
- Divide the cooked udon noodles into two bowls. Pour the creamy soy milk sauce generously over the noodles.
- Top the noodles with the sautéed spinach and mushroom mixture.
- Finish by sprinkling toasted sesame seeds over each bowl for added crunch and flavor.
