Ingredients

Udon noodles
8 oz
Soy milk
1 cup
Miso paste
2 tablespoons
Soy sauce
2 tablespoons
Mirin
1 tablespoon
Fresh spinach
2 cups, washed and roughly chopped
Shiitake mushrooms
1 cup, sliced
Green onions
3, sliced
Sesame seeds
2 tablespoons, toasted

Instructions

  1. Bring a large pot of water to a boil and cook the udon noodles according to the package instructions. Drain and set aside.
  2. In a small saucepan, combine the soy milk, miso paste, soy sauce, and mirin. Whisk until smooth and heat over medium heat until warmed through, stirring occasionally to prevent sticking.
  3. In a separate pan, heat a drizzle of oil over medium heat. Add the sliced green onions and shiitake mushrooms. Sauté for about 3-4 minutes, or until the mushrooms are tender.
  4. Add the chopped spinach to the pan and cook for an additional 2 minutes, or until wilted.
  5. Divide the cooked udon noodles into two bowls. Pour the creamy soy milk sauce generously over the noodles.
