Original recipe serves 4

Water
4 cups
Cornmeal
2 cups
Salt
1 teaspoon

Instructions

  1. In a large saucepan, bring 4 cups of water to a rolling boil over medium-high heat.
  2. Gradually add 2 cups of cornmeal to the boiling water, stirring vigorously with a wooden spoon or whisk to prevent lumps from forming.
  3. Once all the cornmeal is added, reduce the heat to low and continue stirring until the mixture thickens and pulls away from the sides of the pan, approximately 10-15 minutes.
  4. Add 1 teaspoon of salt and mix well, stirring for another 2-3 minutes until fully incorporated.
  5. Remove from heat and let the ugali rest for a few minutes to firm up.
  6. To serve, wet your hands slightly and shape the ugali into a round or oval mound. Serve hot alongside your favorite stew or sauce.
