Ume Juice

- 1 pound, washed and stems removed Ume (Japanese plums)
- 1 cup Sugar
- 4 cups Water

Instructions
- Wash the ume thoroughly and remove the stems.
- In a large pot, combine the ume and sugar. Let it sit for about 1 hour to allow the ume to release their natural juices.
- After the hour, add the water to the pot and bring the mixture to a boil over medium heat.
- Once boiling, reduce the heat to low and let it simmer for approximately 30 minutes, stirring occasionally.
- After 30 minutes, turn off the heat and allow the mixture to cool to room temperature.
- Once cooled, strain the juice through a fine mesh sieve or cheesecloth into a pitcher, discarding the solids.
- Refrigerate the strained juice until chilled. Serve over ice for a refreshing drink.
Tips
- For a sweeter flavor, you can increase the sugar to 1.5 cups.
- Try adding a few mint leaves during the simmering process for an extra refreshing twist.
- Ume juice can also be used as a base for cocktails. Mix it with soda water and a splash of gin for a delightful adult beverage.
