Ume juice, also known as plum juice, is a delightful and tangy beverage that captures the essence of summer in every sip. Ingredients

Ume (Japanese plums)
1 pound, washed and stems removed
Sugar
1 cup
Water
4 cups

Instructions

  1. Wash the ume thoroughly and remove the stems.
  2. In a large pot, combine the ume and sugar. Let it sit for about 1 hour to allow the ume to release their natural juices.
  3. After the hour, add the water to the pot and bring the mixture to a boil over medium heat.
  4. Once boiling, reduce the heat to low and let it simmer for approximately 30 minutes, stirring occasionally.
  5. After 30 minutes, turn off the heat and allow the mixture to cool to room temperature.
  6. Once cooled, strain the juice through a fine mesh sieve or cheesecloth into a pitcher, discarding the solids.
  7. Refrigerate the strained juice until chilled. Serve over ice for a refreshing drink.
