Vada Pav
Vada Pav, often dubbed as Mumbai's beloved burger, is an irresistible street food delight that combines a spicy, golden potato fritter (vada) with soft, pillowy bread rolls (pav). Ingredients
- 4 medium, boiled and mashed Potatoes
- 2, finely chopped Green chilies
- 1 inch, grated Ginger
- 4 cloves, minced Garlic
- 1/2 teaspoon Turmeric powder
- 1 teaspoon (adjust to taste) Red chili powder
- to taste Salt
- 2 tablespoons, chopped Coriander leaves
- for frying Oil
- 4 Pav (bread rolls)
- 1/4 cup Tamarind chutney
- 1/4 cup Green chutney

Instructions
- In a mixing bowl, combine the boiled and mashed potatoes, finely chopped green chilies, grated ginger, minced garlic, turmeric powder, red chili powder, chopped coriander leaves, and salt. Mix thoroughly until the ingredients are well combined.
- Divide the potato mixture into equal portions and shape each portion into a small ball. Flatten each ball to form patties.
- Heat oil in a deep pan over medium heat. Once the oil is hot, carefully drop the potato patties into the oil. Fry them until they are golden brown and crispy, about 4-5 minutes. Remove the fried patties and drain on paper towels to remove excess oil.
- While the patties cool, prepare the pav. Slit each pav horizontally without cutting all the way through, creating a pocket.
- Spread a generous amount of green chutney on one side of the pav and tamarind chutney on the other side.
- Place one crispy potato patty in the center of the pav and gently close it.
- Serve hot, accompanied by additional chutneys and a sprinkle of fried green chilies for added flavor.
