Vanilla Beignets

Ingredients
- 2 cups All-purpose flour
- 1/4 cup Sugar
- 2 teaspoons Baking powder
- 1/4 teaspoon Salt
- 3/4 cup Milk
- 1, large Egg
- 1 teaspoon Vanilla extract
- for frying Vegetable oil
- for dusting Powdered sugar

Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, combine the milk, egg, and vanilla extract. Mix well.
- Add the wet ingredients to the dry ingredients, stirring until just combined. Do not overmix.
- Cover the dough with plastic wrap and let it rest for about 30 minutes.
- In a deep skillet or heavy pot, heat about 2 inches of vegetable oil to 350°F (175°C).
- Using a spoon or small ice cream scoop, drop the dough into the hot oil, cooking a few at a time. Fry until golden brown, about 2-3 minutes on each side.
- Remove the beignets with a slotted spoon and drain on paper towels.
- While still warm, dust generously with powdered sugar before serving.
