Ingredients
- Water
- 4 cups
- Olive oil
- 2 tablespoons
- Black pepper
- 1/2 teaspoon
- Salt
- 1 teaspoon
- Vegetable seasoning (Vegeta)
- 1 tablespoon
- Parsley
- 1/4 cup, chopped
- Onion
- 1 medium, chopped
- Potatoes
- 2 medium, diced
- Carrot
- 1 large, diced
- Kale
- 4 cups, chopped
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and diced carrot, sautéing until the onion is translucent and the carrot is tender, about 5 minutes.
- Stir in the chopped kale and diced potatoes, mixing well to combine all the vegetables.
- Pour in the water, then add the vegetable seasoning, salt, and black pepper. Stir to combine.
- Bring the mixture to a boil, then reduce the heat and simmer for about 45 minutes, or until the vegetables are tender.
- Once cooked, stir in the chopped parsley for a fresh finish.
- Serve warm, ideally with crusty bread for dipping.
