Ingredients

Water
4 cups
Olive oil
2 tablespoons
Black pepper
1/2 teaspoon
Salt
1 teaspoon
Vegetable seasoning (Vegeta)
1 tablespoon
Parsley
1/4 cup, chopped
Onion
1 medium, chopped
Potatoes
2 medium, diced
Carrot
1 large, diced
Kale
4 cups, chopped

Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the chopped onion and diced carrot, sautéing until the onion is translucent and the carrot is tender, about 5 minutes.
  3. Stir in the chopped kale and diced potatoes, mixing well to combine all the vegetables.
  4. Pour in the water, then add the vegetable seasoning, salt, and black pepper. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat and simmer for about 45 minutes, or until the vegetables are tender.
  6. Once cooked, stir in the chopped parsley for a fresh finish.
