Ingredients
- Canned jackfruit
- 2 cans, drained and rinsed
- Vegetable broth
- 1/2 cup
- BBQ sauce
- 1 cup (store-bought or homemade)
- Maple syrup
- 2 tablespoons
- Apple cider vinegar
- 2 tablespoons
- Smoked paprika
- 1 teaspoon
- Cayenne pepper
- 1/2 teaspoon (adjust to taste)
- Salt
- 1/2 teaspoon (to taste)
- Black pepper
- 1/4 teaspoon (to taste)
- Olive oil
- 1 tablespoon
- Garlic
- 3 cloves, minced
- Onion
- 1 medium, diced
- Hamburger buns
- 4, toasted
- Coleslaw
- 1 cup (store-bought or homemade)
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add the diced onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the drained and rinsed jackfruit to the skillet. Use a fork to break it apart into smaller, shredded pieces.
- Stir in the BBQ sauce, vegetable broth, maple syrup, apple cider vinegar, smoked paprika, cayenne pepper, salt, and black pepper. Mix well to combine.
- Reduce the heat to low and let the jackfruit simmer for about 30 minutes, stirring occasionally, until it is tender and has absorbed all the flavors.
- While the jackfruit is simmering, prepare the coleslaw if desired.
- Toast the hamburger buns until golden brown.
- Once the jackfruit is ready, remove it from the heat. It should be juicy and flavorful.
- Assemble the sandwiches by placing a generous amount of the BBQ pulled jackfruit on the bottom half of each toasted bun.
- Top with coleslaw if desired, and cover with the top half of the bun.
