Ingredients

Green onions
2, chopped for garnish
Dairy-free cheese
1 cup, shredded
Salt and pepper

1 teaspoon

2 tablespoons
Canned diced tomatoes
1 can (14.5 oz)
Canned kidney beans
1 can (14.5 oz), drained and rinsed
Bell pepper

Garlic
2 cloves, minced

Instructions

  1. Preheat the grill or stovetop grill pan to medium heat.
  2. Grill the vegan sausages until they are heated through and have grill marks, approximately 5 minutes per side. Set them aside once done.
  3. While the sausages are grilling, begin the chili. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  4. Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook until they are softened, which should take about 5 minutes.
  5. To the pot, add the drained kidney beans, diced tomatoes, tomato paste, chili powder, cumin, paprika, salt, and pepper. Stir well to combine all the ingredients.
  6. Allow the chili to simmer for 15-20 minutes, stirring occasionally. This will help the flavors meld together.
  7. Place the grilled sausages in the hot dog buns. Top each sausage with a generous scoop of the homemade chili, followed by a sprinkle of dairy-free cheese.
  8. Place the chili cheese dogs under the broiler for a few minutes, until the cheese is melty and bubbly. Keep a close eye on them to prevent burning.
