Vegan Chili Cheese Dogs

- Canned kidney beans
- 1 can (14.5 oz), drained and rinsed
- Bell pepper
- 1, diced
- Garlic
- 2 cloves, minced

Instructions
- Preheat the grill or stovetop grill pan to medium heat.
- Grill the vegan sausages until they are heated through and have grill marks, approximately 5 minutes per side. Set them aside once done.
- While the sausages are grilling, begin the chili. In a large pot, heat 1 tablespoon of olive oil over medium heat.
- Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook until they are softened, which should take about 5 minutes.
- To the pot, add the drained kidney beans, diced tomatoes, tomato paste, chili powder, cumin, paprika, salt, and pepper. Stir well to combine all the ingredients.
- Allow the chili to simmer for 15-20 minutes, stirring occasionally. This will help the flavors meld together.
- Place the grilled sausages in the hot dog buns. Top each sausage with a generous scoop of the homemade chili, followed by a sprinkle of dairy-free cheese.
- Place the chili cheese dogs under the broiler for a few minutes, until the cheese is melty and bubbly. Keep a close eye on them to prevent burning.
- Garnish the vegan chili cheese dogs with chopped green onions and serve hot. Enjoy your delicious plant-based meal!
