Ingredients

  • Green onions (2, chopped for garnish)
  • Dairy-free cheese (1 cup, shredded)

  • Paprika (1 teaspoon)
  • Cumin (1/2 teaspoon)
  • Chili powder (2 tablespoons)
  • Tomato paste (2 tablespoons)
  • Canned diced tomatoes (1 can (14.5 oz))
  • Canned kidney beans (1 can (14.5 oz), drained and rinsed)
  • Bell pepper (1, diced)
  • Garlic (2 cloves, minced)

  • Hot dog buns (4)
  • Vegan sausages (4)

Instructions

  1. Preheat the grill or stovetop grill pan to medium heat.
  2. Grill the vegan sausages until they are heated through and have grill marks, approximately 5 minutes per side. Set them aside once done.
  3. While the sausages are grilling, begin the chili. In a large pot, heat 1 tablespoon of olive oil over medium heat.
  4. Add the diced onion, minced garlic, and diced bell pepper to the pot. Cook until they are softened, which should take about 5 minutes.
  5. To the pot, add the drained kidney beans, diced tomatoes, tomato paste, chili powder, cumin, paprika, salt, and pepper. Stir well to combine all the ingredients.
