Ingredients

  • Vegan chocolate chips (1 cup)
  • Salt (1/4 teaspoon)
  • Baking soda (1/2 teaspoon)
  • All (purpose flour - 1 1/2 cups)
  • Vanilla extract (1 teaspoon)
  • Water (3 tablespoons)
  • Flaxseed meal (1 tablespoon)
  • Granulated sugar (1/4 cup)
  • Brown sugar (1/2 cup)
  • Vegan butter (1/2 cup)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the vegan butter, brown sugar, and granulated sugar until well combined.
  3. In a small bowl, mix together the flaxseed meal and water. Let it sit for 5 minutes to thicken.
  4. Add the flaxseed mixture and vanilla extract to the butter-sugar mixture. Mix well.
  5. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  7. Fold in the vegan chocolate chips.
  8. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes, or until the edges are golden brown.
  10. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
