
Vegan Chocolate Chip Cookies

Ingredients
- Vegan chocolate chips (1 cup)
- Salt (1/4 teaspoon)
- Baking soda (1/2 teaspoon)
- All (purpose flour - 1 1/2 cups)
- Vanilla extract (1 teaspoon)
- Water (3 tablespoons)
- Flaxseed meal (1 tablespoon)
- Granulated sugar (1/4 cup)
- Brown sugar (1/2 cup)
- Vegan butter (1/2 cup)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, cream together the vegan butter, brown sugar, and granulated sugar until well combined.
- In a small bowl, mix together the flaxseed meal and water. Let it sit for 5 minutes to thicken.
- Add the flaxseed mixture and vanilla extract to the butter-sugar mixture. Mix well.
- In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the vegan chocolate chips.
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden brown.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
