Vegan Cornbread

Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a 9-inch square baking pan.
- In a large mixing bowl, whisk together the cornmeal, all-purpose flour, baking powder, salt, and sugar. Ensure all ingredients are well combined.
- In a separate bowl, combine unsweetened almond milk and apple cider vinegar. Allow this mixture to sit for about 5 minutes to curdle, creating a vegan 'buttermilk'.
- After the 'buttermilk' has curdled, add in the vegetable oil and maple syrup. Stir these wet ingredients well.
- Gradually add the 'buttermilk' mixture to the dry ingredients, stirring gently until just combined. Be careful not to overmix as it could result in a dense cornbread.
- Pour the batter into your prepared baking pan, smoothing the top with a spatula for even baking.
- Bake for 20-25 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
